Recipe Box: Delicious Fudge Perfect For Christmas

Making fudge is becoming a bit of a tradition in our house at Christmas time. I have always loved fudge and so making it a part of our Christmas celebrations makes perfect sense. In the past I have made the cheats version using my slow cooker and although it is tasty, it never has the true texture of stove cooked fudge.

I have never been brave enough to make real fudge, always thinking it would be far too difficult or dangerous. But it is actually rather simple and tastes amazing! Now, I must confess this is still a bit of a cheat version as I used a fudge kit from Fudge Kitchen, but the process is the same nonetheless. In a little over 15 minutes I was greedily gobbling up the fudge- yum!

The kit contains everything you need, besides some whipping cream. I sent Mr F out for the cream on the way back from the gym so I would have everything ready for when the girls were up and about. We have had the kit sitting on the side in the kitchen for ages but I didn’t want to do it too early, I wanted to save the fun for the build up to Christmas- it was well worth the wait too! 

First job is to mix the dry ingredients with the wet. The kit actually comes with three types of fudge ingredients- we chose the Vanilla Rainbow to start with and will make the others over the coming weeks. You then add the double cream and a little water and place it on a low heat.

Once the mixture starts to boil you place the thermometer on the side of the pan and wait for it to reach 237ºF. You then pour the mixture onto the worktop or a chopping board (note: it took absolutely ages to clean up my worktop so you may want to use a chopping board and put it in the dishwasher afterwards).

After a few minutes of scooping the mixture it started to cool and harden. I quickly shaped it and added the decorations.

Little G helped too, not as much as she would have liked as although the kit is for kids she had to watch for the most part due to the high temperatures.

Then comes the fun bit- the eating! I am telling you, once you have made fudge this way you will never want to make it the slow cooked way again!

Fabulous! I've always wanted to make fudge as I think it would be such a lovely Christmas gift but I've been intimidated by recipes. I'll definitely give it a go now.
