I am not the most organised of people, I am terrible at planning ahead and more often than I’d like to admit we turn to takeaways for dinner. The thing is, despite this, I am a bit of a food snob and have always viewed frozen food as a cheat – making everything from scratch myself. But who has time to make complicated meals when you have 3 kids?
Iceland recently got in touch and asked whether I would be interested in learning a few recipes – ones that would be quick and simple. Well, quick and simple is what I am all about! It is all part of their #PowerOfFrozen campaign and ties in with their new Eat The Week program over on Channel 4. This week’s episode is Stuck in a Rut and I can totally relate to that! If I do manage to get organised enough to make dinner I will always turn to the same old faithfuls – Shepherd’s Pie or Spaghetti Bolognese.
Iceland wants to help us get out of that rut and so with the help of Simon Rimmer, are sharing some fab recipes throughout the episode (which airs today at 12.20pm) and throughout the series. I’ve got an exclusive, behind the scenes look at one of the recipes from today’s episode – Sausage & Spinach Frittata. Yum!
I am sure you already know, but Iceland sell more than just frozen food and so you can pick up everything you need for your weekly shop.
Here is the ingredients list for the frittata:
- 6 eggs – beaten
- 125ml cream
- Salt and pepper
- 25g flat leaf parsley – chopped
- 3 onions – sliced
- 1 clove of garlic – crushed
- 4 cooked sausages – sliced
- 100g frozen spinach – defrosted and squeezed
- 75g finely grated parmesan or pecorino cheese
- 30g oil
- 30g butter
First, weigh out the frozen spinach and set aside to thaw.
Fry up the onions with the oil and butter until they are caramelised.
Crush the garlic and add that in to the onions for a few minutes.
Crack the eggs into a bowl and whisk with the cream and the parsley.
Now in the episode they use a pan but all of ours have plastic handles so I used a silicone tray instead. Pour in the onion mix and top with the egg mixture.
Chop the sausages lengthways and lay them in the mixture.
Sprinkle the defrosted spinach on top and grate the cheese to lightly cover the whole mixture. Then all you have to do is pop it in the oven at 180º for 10-15 minutes or until a knife comes out clean.
Once it is cooked you can serve as a standalone dish or perhaps with some chunky chips. We had it for lunch and didn’t have anything with it as it was more than enough for the 4 of us.
The best thing is, the kids loved it! Win!

I think growing up Iceland had the reputation of being a chavvy shop. I often shop there with the Mrs and our fussy kids love the food there.
This looks amazing and I'll definitely be giving it a whirl.

Iceland opened one shop in Malta which was a talking point amongst many of my fellow expat Brit friends! One of my sisters was the assistant manager there at the age of 18 and I must admit I used to buy loads of their food. I don't have a snobby attitude towards frozen at all because it's far healthier than a diet of burgers, fry ups and fizzy drinks and you can always make fresh stuff to go with it. I'm going to give this recipe a go!

This is a great recipe and right up my street. Simple and quick. As I don't collect Monkey from after school club until six I need something which is tasty and doesn't take long to prepare. I also know what you mean about being stuck in a rut as I tend to go into auto pilot after a long day at work. Will have to check this out and make more of an effort!

I have just made this and it was amazing very filling and not like an omelette which I thought it would be such a quick easy meal I changed the cheese to goats cheese and cream to lactose free as I am lactose intolerant but it worked wonderfully
