Inside: Recipe for dairy free jam biscuits
First up I should say that the only thing that makes this dairy-free is the fact that you use Vitalite instead of butter. So if you don’t need to avoid dairy then go ahead and swap in butter or margarine.
These are a firm favourite in our house and take minutes to make. I am all about lazy cooking so never attempt anything too fancy or complicated – these are definitely not either of those two things!

The ingredients list is simple, things that you’ll already have in your cupboard…
- 100g Vitalite (or butter)
- 100g caster sugar (I actually prefer golden caster)
- 1 egg
- Vanilla extract
- 200g self-raising flour
- Jam
The method is also simple – mix the butter and sugar together briefly, throw in a couple of drops of vanilla, crack the egg and then chuck in the flour. I don’t even bother with a sieve!
Once it is starting to combine, plop the mixture onto the work surface and roll into a sausage. If you need to, sprinkle some extra flour to stop it sticking.

Once you have your sausage, cut off little disks and pop them on a baking tray. This mix should make 12 biscuits but you could make 24 smaller ones if you wanted.

Next up is something my kids like helping with – pressing their thumbs to make a hole for the jam.

Then you just plop some jam into the middle and shove them in the oven! 170° for around 15 minutes and they will spread out to make 12 good sized biscuits.
