Ingredients
- 1 (15 oz / 425g) can chickpeas, drained
- ¼ cup (60 ml) fresh lemon juice (about 1 large lemon)
- ¼ cup (60 ml) well-stirred tahini
- 1 small garlic clove, minced
- 2 tablespoons (30 ml) extra-virgin olive oil
- ½ teaspoon ground cumin
- Salt, to taste
- 2 to 3 tablespoons (30–45 ml) cold water, as needed
Method
- Whip the Tahini and Lemon Juice
In a food processor, combine the tahini and lemon juice. Blend for 1 minute, then scrape down the sides and bottom of the bowl. Process again for another 30 seconds. This step helps create an extra smooth, creamy base. - Add Flavourings
Add the olive oil, minced garlic, cumin, and ½ teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds. Scrape the sides again, then blend once more until everything is well combined. - Add Chickpeas
Drain the chickpeas and add half to the processor. Blend for 1 minute, then scrape down the bowl. Add the remaining chickpeas and continue blending for another 1–2 minutes until thick and mostly smooth. - Adjust Texture
With the processor running, slowly drizzle in 2 to 3 tablespoons of cold water until the hummus reaches your desired consistency—light, creamy, and spoonable.
How to Serve
- Drizzle with olive oil and sprinkle with paprika or chopped herbs.
- Serve with warm pita, crackers, or fresh-cut vegetables.
- Use as a sandwich spread or salad topper.
Storing
Store your homemade hummus in an airtight container in the fridge. It will stay fresh for up to 5 days—though it’s so delicious, it might not last that long!
