It has only been recently that I’ve discovered a love of pancakes. As a child my mum used to make them with sugar and lemon and I think this may be where I went wrong – throw on an unthinkable amount of golden syrup and I’m happy as Larry! At the moment I am still dairy free but I thought I would share a recipe for those of you who are able to enjoy a bit of cream – Baileys Irish Cream pancakes. Yum!
They are basically the same as normal pancakes but you add in a measure of Baileys to give an added kick! You can add as much or as little as you like really, just substitute out more of the milk.
Ingredients
200g self raising flour
50g caster sugar
250ml milk
2 eggs
1/2 shot Baileys
Method
Add in all of the ingredients to the bowl and give a whisk until light and creamy.
Add in the half shot of Baileys and give it a stir. Then all you have to do is fry them, stack them and eat them!

I can't believe it's not occurred to me to do this! I bet they taste so good! I sometimes add a shot of baileys to the mixture when I make chocolate cake, yum! x
