If you have been reading my blog for a while you’ll know I have a history of allergies with my children. The latest being Will and his allergy to dairy and soya. I have shared the beginning of our dairy & soya free journey here and am going to share all of the recipes and tips I find along the way. Hopefully if you are going through the same it will be helpful for you! If you’ve never gone through it then please have hope – Lils has completed the milk ladder and has very recently shown signs that her soya allergy has ‘downgraded’ to an intolerance. Hurrah!
Recently a friend came over and I wanted to make something that we could both enjoy – her son is milk and soya allergic too. I saw lots of people sharing Oreo brownie recipes and thought I could do my own soya free version using Bourbon Biscuits 🙂
Such an easy recipe – although you will need some measuring cups. I know that is very American but honestly it is so much easier than trying to measure on scales. Goodness knows with a baby you need all the time saving tips you can take! I have these cups and they do the job nicely!
Ingredients
– 1 3/4 cups sugar
– 2/3 cup cocoa
– 1/2 tsp. baking powder
– 1 tsp. salt
– 1 cup flour
– 1 cup oil
– 2 tsp. vanilla
– 4 eggs
Method
Preheat oven to 180ºC and then spray your pan with cooking oil. I actually didn’t have any oil so popped in some foil and that worked fine.
In large mixing bowl, combine all ingredients (so simple isn’t it?) and then give them a mix. Pour the whole lot into the pan and give it a couple of knocks on the worktop to get any bubbles out.
Bake for 30-35 minutes and then check with a skewer to see that they are done. You want it to come out clean but don’t leave them in too long or they will be dry. Once they are done, leave them to cool for a little while before cutting into squares.
Such an easy recipe but super yummy!
I think they could have done with being a bit sweeter so don’t be too afraid to add in a little extra sugar! They were so tasty though and between us we scoffed the lot!!

Oh my goodness Katy, they look so yummy and gooey. I love brownies. Just add a scoop of vanilla ice cream and you'll be my friend forever! I've got quite a few dairy and soya-free recipes. My favourite is our chocolate ice cream... so simple yet scrummy and healthy!
