I always like to get the girls involved in the kitchen and they love it! We were recently contacted by Hartley’s and asked if we would like to try out something a bit different using their jelly cubes. The recipe they sent was actually only lemon but you can’t rely on supermarkets to have what you need can you? I thought lemon and lime would be a nice twist, something refreshing for spring!
Before we could start on the jelly, we had to decorate the glasses. The girls really enjoyed this as they love a bit of crafting.. possibly their favourite thing to do!

Once the glasses were dry we began making the jelly pies. It is not a quick dessert but they look great and are worth the effort involved.
First of all you need to break up 300g of digestive biscuits, mix in 50g melted butter and make a biscuit base. Once it is pressed into the glass, put it into the fridge to cool.
The next couple of stages require patience so make sure you have enough time to get it all done. Make up one pack of Hartley’s jelly cubes as instructed on the pack. Put it straight in the fridge until it is just about set. Pour it on top of the biscuit layer and put back in the fridge until it is completely set.
Next is the little twist and not something I would have thought to do. Make up another pack of jelly with 150ml of boiling water. Leave to room temperature and add in a tin of evaporated milk. Whisk it up and pour on top of the set jelly.
Aren’t the layers fab? I broke up some meringue and sprinkled it on top of the creamy jelly. Then, to add a little more zing I added a sprinkling of lemon zest.
While they were chilling in the fridge, the girls made me some mothers’ day cards.
I’ve blanked out G’s name of course but I am so proud of her writing. I am a teacher as you know but I am actually really rubbish at doing anything with her. She has taught herself how to write and it just makes me so happy (if a little guilty…).
They ate their jelly pots for pudding and devoured the lot. Thankfully I made spares for me and Mr F to enjoy once they had gone to bed! I will definitely give them another whirl, might even make them to take to my mum’s on Sunday as she is having us for mothers’ day.

Aww this is really sweet it reminds me of a recipe my mam used to do with digestive biscuits with angel delight. Did you just use watercolour paint or is it something else? That would be a good activity to do in spring/summer with kids outside maybe a party and then they get the dessert :-)

They were acrylics, there is probably some way to make sure they don't wash off but I'm just going to hand wash for now. Was a really fun activity xxx
