Recipe Box: Mince Pies With A Twist

I am completely addicted to mince pies! There, I’ve said it. It is a good job they are only in the shops for a month or so or else I would be eating them 365 days a year! Or maybe it is because they are limited it makes them more appealing… who knows? All I know is I cannot stop eating them right now- bring on the health kick of 2016!

But for now… 

We have been making our own, so much nicer than shop bought- especially when they are fresh out of the oven. Ours have a bit of a twist though as they are Mince Pie Pops! Much more fun for kids (and adults too) so I thought I would share the idea so you can make some too!

First things first, save yourself time and buy some pre-made pastry! Plenty of time to make your own when it is not the busiest time of the year.

If you have willing helpers then they can cut out the shapes for you. We used stars, circles and a festive bauble cutter. You will need to cut in pairs- one for the top and bottom.

Spoon the mince meat mixture onto the bottom shape, leaving about 1cm gap around the edge. Try not to lick the spoon!

Use a pastry brush to wet around the edge and then press the top down, squeezing the edges together.

Now we pressed some shapes onto the top half but they didn’t show up once baked so don’t bother doing that yourself 🙂 Bake them in the oven for 15 or so minutes on 200ºC.

Once they are out of the oven, poke a cake-pop stick inside each pie and then leave to cool in a stand.

I say cool, what I mean is cool enough until you can gobble them up!

You make these look easy! We made some last week and will make some more for Christmas (or buy some from Waitress) I had to make my pastry though and I'm not great at that. xx
