Lunchtime seems to be the time of day when I struggle most with making myself a healthy meal. Are you the same?
With a lunchtime pickup from nursery and having to get lunch for everyone else, I tend to pick on other things and forget to make myself a proper lunch.
With starting my new health journey, I am trying to take better care of myself and make time to prepare my meals – ensuring they are all healthy and balanced.
Spicy Tomato Mackerel with tagliatelle
Mackerel is my new favourite source of protein and Princes have loads of different tins, with various flavours and sauces to make a delicious lunch. I have shared a tasty Moroccan dish and here I am going to share a Spicy Tomato pasta dish – so easy to make!
– 2 tins of Princes Spicy Tomato Mackerel
– 75g dry tagliatelle
– Basil to garnish
Such a simple dish – simply boil the pasta and place the mackerel on top with a basil leaf to garnish.
So simple, so good!
I love that it is quick but I love that it is nutritious too, being high in omega 3 fatty acids which are great for maintaining a healthy heart. It is also a pet peeve of mine when you have to fillet fish yourself, so the fact that Princes mackerel is ready to eat straight from the tin is brilliant!
Anything that makes my life easier when juggling mum life with three kids is going to be a win for me! My cupboard will be stocked with tins from now on, so I know a healthy meal is just 15 minutes away!
